    It's no contest when it comes to what people think is important in a kitchen. TOP choice by far is a GREAT SET OF KNIVES! One quote was they didn't think they made a difference until her husband bought her a "top of the line" set. She was in and so should you! Start adding your brands, people want to hear and compare!

They were packed away for many, many years - who needs knives in a dorm or when you live in a house with no usable kitchen?!!? Anyway, I finally unpacked them when we moved in July and they're great!!! I did have to throw away a couple that rusted but the santoku-style knife is great! It has kept it's edge better than the $20 santoku my husband bought me for Christmas a few years ago!!! I mean, I won't be slicing through any aluminum cans with it any time soon but it's still a great knife!

    I have spent as much as $150.00 dollars on a top name brand santoku style knife and even those will get dull eventually although they hold their edge much longer then any of the less expensive brands.

    Balance and weight are the other two items to consider when purchasing a knife along with how often you are going to use it.
    The high en knives are so well balanced you can blaze through an onion at blinding speeds with the chopping noise sounding like the drumming of a woodpecker on cocaine.
    Which is fun but not necessary for the average cook not preparing for a cooking competition.

    So after trying many brands I settled for a local manufacturer for a fraction of the top knife makers price, that guarantees the knives and will sharpen them free of charge . Also The drive to the store in Shelborn Massachusetts is quite nice and you get to see the bridge of flowers while you are at it.
