Looking for sandwich spread ideas?

  Hey y'all! :-)
  
  Some of y'ins may know that I have a catering biz here in the mountains for the tourist trade. We add amenities to the luxury cabins for guests who come to the Smokies. Say for example you want your tub surrounded with candles, bath oils, and balloons in the tub, we have that waiting on you when you get there.
  
  So anyway, my part of that business is the FOOD. I'm the one who sets up cabin kitchens, designs the food prep areas, and also does the grocery shopping and catering for any parties that book through several different cabin companies here.
  
  What I'm looking for right now is a great tasting sandwich spread that might even look cool inside a little decorative jar, say for a picnic type lunch basket.
  
  Heck, while I'm at it, I'ma ask for y'all to think up anything that might go good INTO that picnic lunch basket to have it ready for the people who want to take a romantic picnic lunch to Cades Cove, the Chimneys, etc.

  You might dheck out the Remoulade with my Salmon Croquettes. I love it by itself with sandwiches, etc. It's mighty good!
