Meatloaf?

    This group gets started with a posting about my mother's meatloaf, if I can call it that.
    She never had a recipe. It was just whatever she could find, mixed in hamburger.
    Although for a few of my formative years, her meatloaf became more standardized. Whenever we would have a meal with a side of peas, we could rest assured that soon we would be served up "meatloaf suprise". It was a loaf of peas covered in a shell of meatloaf. The next day would be "potato suprise". It was a loaf of peas covered in a shell of meatloaf covered in a shell of mashed potatoes. Then the next day when the hamburger ran out, the "potato suprise" would be the loaf of peas covered in a mound of mashed potatoes.

    So let's kick-off this meatloaf group with some recipes, and no peas please!

    OK Points, I will join ya. LOL I love meatloaf. My Mamma or Daddy would put oatmeal in the ground beef to make it go further.

    I also use oatmeal in my meatloaf, but it isn't to extend it, but to break up the meat. I've also used gran flakes or some bread crumbs. I know others use rice.
    It's a good way to sneak stuff in on the unsuspecting people/kids who don't care for certain things. I also use onions and bell peppers for flavor, which can be ground up to hide it from the finicky eaters.
    Also love bits of tomato and some sauce in it and top with a seasoned tomato sauce.
    Now I'm hungry!!!

    Only one recipe I saw on here that tries to fake out kids by making it look like a cake. Shades of my mothers "meatloaf suprise".

    I just wanted to add my 2 cents about hiding stuff that people don’t want to eat in meatloaf. Well my youngest daughter doesn’t like to eat "chunks" in anything she eats. So what I learned to do a long time ago, (she is 23 now) is sauté whatever I'm going to use that is hard before I mix it into the ground meat. This way I still get the entire flavor I want and she doesn’t have any 'chunks". It's a win/win situation.
