I LOVE the food of Mexico. I'm looking for receipe to make Pig Head tomales?

The pork tamales are usually made with pork shoulder or butt, however you could use the pig head. My MIL uses the pig head when she makes posole. I found one website that uses it, but they dont give much detail. http://rollybrook.com/tamales.htm
