Up here in Quebec (Canada) I don't have access to as many of the wonderful Southern produce that make Mexican food so delicious - chayote, tomatillos, most of the chiles used, fresh queso... There are one or two good Latin grocers but they're very far away. I have to settle for jarred or canned items as substitutes, but as long as it gets me close to the real thing, that's all that matters. I ADORE Mexican cuisine and yet, I've never been to Mexico - how sad is that?! ;)
