Fried Egg Sandwich

  Tilla reminded me with her ETC recipe.. of just plain ole fried egg sandwiches.. I think I am going to be going on a sandwich bindge in the next few weeks.. too hot to cook anyway!

  Ah, yes, egg sandwich; another of my breakfast favorites (along with BLT). When I was a kid I used to break the yolk when frying the egg so it would get cooked and not be runny. Bread was toasted in the toaster and sandwich was made open-faced with jelly on it. Lately I've been frying the egg the same way on a small griddle pan, melting a piece of cheese on the top, putting jelly (blackberry is my favorite) on two pieces of bread, then assembling the sandwich and putting it on the griddle to lightly toast the bread and melt the cheese. yum.yum.
