    I totaled fudged this huevos rancheros the other day. I thought a pepper was a pepper it DEFINITELY was not. Almost burned the old sinuses. Wowie! I still don't know what those peppers are, but heck they're HOT!
    I froze some jalapenos to always have to cook with. Does that down grade their sass?

    I wish I could answer your question but alas, I'm useless. I know that cooking chillies will tame them, of course. Letting them sit in acid, like vinegar, will also help. Removing seeds and membrane - duh. What self-respecting chili-head doesn't know that. But freezing? I have a container of chipotles in my freezer but they seem just as good today as when I opened them.
    I know - not helpful. If you figure out the mystery, do let me know!
