By far ,The most famous "pocket" in Israel is the pita .
Filled with anything that you can imagine, so sometimes you get very strange combinations.
The most common "Pita" combination is Fellafel! >>>>>>> felafel balls, tomatoes, cucumbers, Tehinah (Tehini), and pickles.
Felafel is also the national fast-food".

In second place we have the Bourekas. Usually filled with cheese or mashed potatoes. Sometimes filled with meat or mushrooms.

We have a huge Middle east community and there are many places that serve Felafel on a plate with other items like stuffed grape leaves an tubule and one place the I like serves them in pita bread, the recipe is similar sounding to Ronny's. I can not wait to try that recipe.

Time for somebody to dump a few calzones recipes in here. Several cheeses (ricotta mozzarella etc.) and garlic and some maranara sauce in a large folded over, sealed, baked pizza shell.

Best I ever had was at a mom and pop place called "Pizza Town" in Tempe, Arizona.

Can't forget the scacciata recipes or Panzerotti or Cornish pasty or clangers. How about some curry puffs or Jamaican pattys or Jaiozi or gyoza or mandu or samosa.
