Coconut milk?

    Hey there, I just posted this in the Dairyfree group, but figured I would post here too, to get to maybe some other people for an answer:

    Can I use coconut milk as a substitute for milk in a pancake recipe? I can't have dairy and just found out I can't have soy either, and was wondering if anyone has every tried using it in recipes, or what you thought about how well it would work. It is a buckwheat pancake recipe (1 cup buckwheat flour, 1 tsp baking powder, 2 Tbsp sugar, 1/2 tsp salt, [mis together and add to mixture of] 1 egg (beaten), 1 cup milk, 2 Tbsp melted butter or oil).

    I don't know about coconut milk. But you might try either Rice Milk which doesn't have an overly strong flavor. or maybe Almond Milk might add a nice flavor.

I tried it, and they turned out good, though you do have to use a little bit of another liquid- water, almond milk, or juice, to thin the coconut milk a little, because it's quite thick. The pancakes were tasty though, and the coconut flavor isn't really overpowering at all. They make for denser pancakes than usual, but the flavor and texture is nice.

    Thanks, Peetabear, I'll try those kinds too. I use Almond milk on a regular basis. I tried rice milk several years ago when I started having trouble with milk and didn't really like the aftertaste at all, but it might not be so bad to bake with. How do you feel it effects flavors?

    I drink soy milk rather than rice milk... I have used rice milk in rice pudding and some other recipes and didn't find it effected the flavor but it does effect the richness.. I do add a little 1/2 & 1/2 which helps alot... I haven't tried this but I think a mix of rice and almond milk would give the rich flavor and texture of milk in baking. you also have some hard allergies to work around.. I will have to give the coconut milk a try.
