  That is the kind of recipe I'm looking for today, or anything else w/out eggs for breakfast. I love eggs, but my husband doesn't, and I don't want to cook 2 different breakfasts...and my daughter will eat anything I make!

  I know this is way too late, but how about creamed spinach on toast? Wilt it down in a bit of olive oil or butter, season with a touch of nutmeg, S&P, and serve her on up on a bagel or a nice slab of french toast. I love mine drizzled with maple syrup too :D
