To Skin or Not to Skin - Tomoatoes

    I am getting ready to clear our garden tomoato plants and make a big batch of home made tomato sauce for freezing. I planned to use a blender to mix the tomatoes, onions, garlic, and fresh spices (also from my garden).

    It occured to me while I was prepping the kitchen, I do not know why we skin tomatoes prior to freezing them.

    Why should I skin these if I plan to puree them for freezing?

    there is no need to skin them... I don't... occasional you will get a small piece of skin that will twist into a little 'stick' ...but other than that the puree is fine and I think healthier...

    Peetabear - thank you so much. The whole time was cleaning the plants of all the fruit, I just could not come up with a valid reason to skin these bad boys. Especially the tiny cherries - there are simply too many of them for us to eat and I cannot in good conscious let them rot on the vine.

    I know what my mailman, nail stylist, house keeper, and mother in law are getting for Christmas. Tomato Sauce !

    If you don't want to bother skinning the tomatoes but don't want them in your sauce either, using a food mill to puree them will take care of that for you....The tomatoes go through the mill while the skins remain on top.
