I Can't Believe It's Low-fat Citrus Cheesecake Recipe

Ingredients
  • 1 tsp vanilla extract .
  • 2 (8 oz) packages fat free cream cheese .
  • 2 tbsps brown sugar (I use Spenda) .
  • 1/3 c wheat flour .
  • 1 c graham cracker crumbs .
  • 1/2 c 1% low-fat milk .
  • 2 eggs .
  • 1/4 c sugar or Splenda granular .
  • 3 egg whites .
  • 1 tbsp fresh lime juice .
  • 2 tbsps butter or margarine, melted .
  • 1 tsp orange peel, grated .
  • Crust .
  • Filling .
  • 1 tsp lemon peel, grated .
  • 1 tbsp fresh lemon juice .
  • 1/2 c sugar or Splenda granular .
  • 1/3 c nonfat sour cream .
  • 1 tbsp fresh orange juice .
  • cooking spray .
  • 1 tsp lime peel, grated

Directions
  • Step #1 Preheat oven to 300F degrees.
  • Step #2 Coat a 9" springform pan with cooking spray.
  • Step #3 In a medium bowl mix crumbs, brown sugar, & butter.
  • Step #4 Then press into the bottom & 2" up the of the pan.
  • Step #5 Set aside.
  • Step #6 In a large bowl or food processor/blender, mix sugar & flour.
  • Step #7 Add vanilla, cream cheese, & eggs.
  • Step #8 Beat until smooth.
  • Step #9 Add milk, citrus juices, sour cream, & peels.
  • Step #10 Beat until smooth.
  • Step #11 In a separate bowl, beat egg whites at high speed until soft peaks form.
  • Step #12 Add sugar, 1 Tbls.
  • Step #13 at a time, & beat until stiff peaks form.
  • Step #14 Gently fold by hand into cream cheese mixture.
  • Step #15 Pour into prepared crust & bake this at 300F degrees for 1 hr or until set.
  • Step #16 Cool completely & cover & chill 4 hrs or overnight.
