Any Beef Bouruignon is a flavourful, hearty beef stew, with onions and bacon, and -- ov course -- red wine. Beef Carbonade is another, but it generally uses beer; HOWEVER, you can replace the beer with red wine, and it changes the flavours completely! Shirleyoma, I have savoury recipes for both, crockpot recipes, tons to chose from - let me know if there is something in particular you'd like me to post - but right now, if I don't go get some groceries, we won't be eating tonight! lol :) :) BTW, you can replace the beef broth (or part of it, anyway) in any beef stew recipe. You might have to add more spices or herbs to compensate for the stronger flavour of the wine, though. It's a taste thing. Hope this helps :)

I keep white vermouth in the pantry at all times, as well as marsala wine. Vermouth keeps forever, it doesn't turn to vinegar and a splash or two to deglaze the drippings in any pan will add so much flavor to the dish. I also keep sherry on hand, particularly for a crab bisque or seafood soup. Sherry adds a great nuance to black bean soups, too. My mom always added a generous splash just before serving her bean soup and it added so much to the dish, you would swoon. Marsala is fortified and lasts a long time too. Turkey medallions with mushrooms and marsala is so simple to make and very very delicious. (Way cheaper than veal marsala, too)

notyourmomma 2 years, 2 months ago said: Vermouth A trick learned from Julia Child. Vermouth doesn't spoil and when you don't buy or drink a white wine, vermouth will sub in just about any recipe that calls for a white wine.
I use it when I saute chicken in some olive oil, remove the chicken, add some vermouth to the hot pan, stir like crazy and add some capers and put the chicken back in the pan with a little extra broth. Quick and easy.
I also, use this with 4 thick fish fillets floured with seasoned flour pan fried in olive oil, splash of vermouth right over the fish, add a few chopped shallots, a can of chopped tomatoes. Done when tomatoes are hot and the fish flakes. Easy fish on a plate super fast and delicious. Lemon garnish.
Turkey cutlets, floured, sauteed, remove, keep warm, add marsala and a lb. of sliced mushrooms, salt and pepper, add turkey back in the pan and cook until mushrooms are limp and cooked.
