Silicone Baking Pans
Has anyone had experience (good or bad) with silicone baking pans? I have not had good results and was wondering if there are some special rules for using them. I've tried a loaf pan and a square "brownie" pan. It seems items start to raise but fall before they are done baking. Also cannot get items to "brown" in the silicone pans. Any suggestions?

RE: Silicone Baking Pans
Hi lipsantos,
I've had mixed results with silicone bakeware. I tried the loaf pan, and the whole loaf expanded vertically and horizontally, resulting in a funny-shaped loaf. The browning on the crust didn't go too well either. I use a silicone mat to cover my cookie sheet when making cookies and it usually works well - though it insulates the bottom quite a bit so for some cookies I prefer lining the pan with parchment paper instead. I'm not sure if there are any good tips for making it work better.
