How to make it

  • Whisk all the dry ingredients in a large bowl
  • With an electric mixer, in a mixing bowl, cream butter and brown sugar until llight and fluffy
  • Add eggs, one at a time until fully mixed
  • Reduce mixer speed to low, adding flour mixture in thirds, alternating with the applesauce
  • Scrape sides of bowl, turning mixer to medium
  • Quickly add the hot coffee, beating until combined, about 30 seconds
  • Fold in by hand the raisins and walnuts
  • Pour batter into a greased and floured 6 cup Bundt cake pan OR pour into a greased and floured 9X13 baking pan
  • Bake at 350 degrees for 40-45 minutes OR until a toothphick inserted in the center comes out clean
  • Place cake in the pan on wire rack to cool
  • Gently run a knife around the edge of the pan
  • Remove cake, cool completely
  • If making a 9X13 pan, cake will remain in pan
  • ICING
  • In bowl, place butter, coffee, in microwave until butter is melted
  • Meanwhile in another bowl, sift cocoa and powdered sugar
  • Make a well in the center and pour in melted butter and coffee
  • Whisk until blended and smooth
  • Pour on top of cake, spreading
  • May be served immediately
  • *If making muffins, pour batter into greased or paper lined tins
  • Bake at 350 degrees for 20-25 minutes
