Surprise Applesauce Cake

- 2 cups flour shopping list
- 1/4 cup cocoa shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1-1/2 teaspoons ground cinnamon shopping list
- 1 teaspoon allspice shopping list
- 1/4 teaspoon ground cloves shopping list
- 1 stick unsalted butter shopping list
- 1-1/2 cups packed dark brown sugar, (I have used light brown before) shopping list
- 2 large eggs, room temperature shopping list
- 1-1/2 cups applesauce shopping list
- 1/2 cup strongly brewed hot coffee (I used Starbucks) shopping list
- 1-1/2 cups dark raisins shopping list
- 3/4 cup chopped walnuts, optional shopping list
- ICING: shopping list
- 1 stick unsalted butter shopping list
- 1/4 cup cocoa powder shopping list
- 1/4 cup strongly brewed hot coffee shopping list
- 2 cups powdered sugar shopping list
How to make it
- Whisk all the dry ingredients in a large bowl
- With an electric mixer, in a mixing bowl, cream butter and brown sugar until llight and fluffy
- Add eggs, one at a time until fully mixed
- Reduce mixer speed to low, adding flour mixture in thirds, alternating with the applesauce
- Scrape sides of bowl, turning mixer to medium
- Quickly add the hot coffee, beating until combined, about 30 seconds
- Fold in by hand the raisins and walnuts
- Pour batter into a greased and floured 6 cup Bundt cake pan OR pour into a greased and floured 9X13 baking pan
- Bake at 350 degrees for 40-45 minutes OR until a toothphick inserted in the center comes out clean
- Place cake in the pan on wire rack to cool
- Gently run a knife around the edge of the pan
- Remove cake, cool completely
- If making a 9X13 pan, cake will remain in pan
- ICING
- In bowl, place butter, coffee, in microwave until butter is melted
- Meanwhile in another bowl, sift cocoa and powdered sugar
- Make a well in the center and pour in melted butter and coffee
- Whisk until blended and smooth
- Pour on top of cake, spreading
- May be served immediately
- *If making muffins, pour batter into greased or paper lined tins
- Bake at 350 degrees for 20-25 minutes
