This is adapted from something my father used to cook when I was young, he called it Huevos Rancheros. Only he made it with over easy eggs on top. The Polenta is a nice break from the everyday egg.

Gluten free, because they are made with Polenta instead of flour tortillas. You can add eggs if you like, they are just not my favorite first thing in the morning. I just called it Rancheros since I left the Huevos out. Maybe it should be called GF Polenta Rancheros. :)
