This is adapted from something my father used to cook when I was young, he called it Huevos Rancheros. Only he made it with over easy eggs on top. The Polenta is a nice break from the everyday egg.

Ingredients
  • 1 pkg.San Gennaro Sundried Tomato and Garlic Polenta "chub"or, if you have homemade leftovers.....feel free to use them
  • 1 can Red Kidney Beans- rinsed and drained
  • Herbed Goat Cheese- to Garnish
  • approx. 2 tsp. Safflower oil- spray
  • 1/2 onion
  • 2 cloves garlic, minced
  • 2 tsp. Cholula Hot Sauce, or your favorite Salsa (or both!)
  • 3Tbs. water
  • 1 tsp. cumin
  • 1 tsp. salt- or more to taste
  • fresh ground Black pepper to taste

Directions
  1. Heat skillet to med high, spray with safflower oil
  2. Slice polenta into 3/4 inch thick discs and fry until golden on each side
  3. In another pan, saute chopped onions over med-high heat until caramelized, when almost done, add garlic and cook about a minute longer.
  4. Add your Red Beans, Cholula, Salsa, water and stir. Cook until mixture thickens.
  5. Season with salt and pepper
  6. Assemble four or five polenta wedges in the center of your plate, add some beans, and finish with the herbed cheese.
  7. If you'd like, you can throw a couple fried eggs on top.
  8. Enjoy!

Huevos Rancheros are always gluten free. They are eggs with salsa, beans, and or chilis on top... If served with tortillas, use the corn tortillas (not flour). Do you mean to say these are "Egg Free" Rancheros???


Gluten free, because they are made with Polenta instead of flour tortillas. You can add eggs if you like, they are just not my favorite first thing in the morning. I just called it Rancheros since I left the Huevos out. Maybe it should be called GF Polenta Rancheros. :)


That would probably be more fitting... I always think Eggs when I think Rancheros...


What ever the final outcome of the recipe title... this is a great recipe and I am glad you have Gluten free in it... more people that are GF will look at it... five forks
