Snow On The Mountain Cake Recipe

Dessert recipe had in my files, not sure of source, but its yummy and luscious ! Presentation is the factor to get oohs and ahhs with this recipe.

Ingredients
- 3/4 cup flour
- 1cup sugar
- 1 tsp. baking powder
- 14 tsp. salt
- 4 eggs, well beaten
- 1 tsp. vanilla
- 1 cup chopped pecans
- 1 cup chopped dates
- 1 jar maraschino cherries
- 2 small cans mandarin oranges-drained
- 1 large can crushed pineapple- drained
- 3 sliced bananas
- 1 cup sugar again
Directions
- Drain fruits and sprinkle on 1 cup sugar - continue to let fruit drain.
- Sift together flour, 1 cup sugar, baking powder and salt.
- Add eggs,vanilla, chopped pecans and dates.
- Mix well and bake in a greased and floured 9 X 13 inch pan at 350 degrees until toothpick comes out clean
- When cake is done and cool, build a mountain with: Chunky baked cake crumbs,fruit, cake crumbs, fruit, etc.
- Then top with a very generous amount of sweetened whipped cream or large tup of Cool Whip, into which you have
- mixed 1 cup shredded coconut.
- Note : Choose a large attractive serving dish to build the cake on and for presentation!
