Swordfish With Spinach Recipe
SWORDFISH WITH SPINACH This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kershaw Estate in Crandall, Texas in 1984.

Ingredients
  • 6 swordfish fillets
  • 10 ounces fresh cleaned spinach
  • 1/4 cup softened butter
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon salt
  • 1/8 teaspoon hot pepper sauce

Directions
  1. Poach swordfish for 5 minutes then steam spinach for 2 minutes.
  2. Add remaining four ingredients to the soften butter and whip until smooth.
  3. Arrange spinach on a plate then place Swordfish on top of spinach.
  4. Top each fillet with a dollop of lemon butter then serve immediately.
