Roasted Aubergine Dip

- 500g aubergines shopping list
- 3 cloves garlic, crushed shopping list
- ½ medium red onion, chopped shopping list
- 1 tbsp tahini sauce shopping list
- 50ml olive oil shopping list
- ½ lemon, juiced shopping list
- a pinch of cumin shopping list
- salt and pepper, to taste shopping list
How to make it
- Roast the aubergine/eggplant on a BBQ to give a smoked flavour.
- Cook until completely soft in the middle and skin is burned 20-30 mins on hot BBQ
- Allow to cool and remove all the blackened bits, some will stay but they add to flavour
- combine with all other ingredients either by chopping by hand or put it in a blender, should have the consistency of thick yogurt
