How to make it

  • Roast the aubergine/eggplant on a BBQ to give a smoked flavour.
  • Cook until completely soft in the middle and skin is burned 20-30 mins on hot BBQ
  • Allow to cool and remove all the blackened bits, some will stay but they add to flavour
  • combine with all other ingredients either by chopping by hand or put it in a blender, should have the consistency of thick yogurt
