posted by Lei from an international recipe group comes this unsual , unique way to use brussel sprouts. may be used as a side, appetizer but not meant as a dessert. I find it very unique!

Ingredients
  • 1 9' crust, frozen or made from your recipe, and baked
  • 1 box, about 1 pound of brussel sprouts, washed and cooked and chopped
  • 2 1/2 cups Skim milk
  • 1/2 cup sugar
  • 3 eggs or 3/4 cup Eggbeaters
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt or more to taste
  • 1/4 teaspoon ground nutmeg
  • dash of ground black pepper
  • chopped nuts for garnish(opt)

Directions
  1. Preheat oven to 425 degs.F
  2. spread chopped brussel sprouts over bottom of pie crust.
  3. In Medium bowl with wire whisk or hand beater, beat remaining ingredients,except nuts.
  4. Place pie plate on cookie sheet or large pie plate or something
  5. you can lift easily and put on oven rack.
  6. Pour custard mixture into pie crust over brussel spouts..... slowly.
  7. do not let it dribble over crush edge, it will burn.
  8. But put enough, so that sprouts are covered.
  9. Bake 20- 25 minutes until knife inserted about 1 inch from center comes out clean.
  10. Garnish with chopped nuts if you like.
  11. This reheats well .
  12. If using microwave, do not use high setting but a med low reheat
