Copper Pennies Recipe
This is a family favorite any time of the year. Keeps well in the frig. once made but usually doesn't stay long. I should say also a Southern favorite at church gatherings. Double or Triple the recipe and serve at Homecomings!

Ingredients
  • 2 lb carrots
  • 1 scant c. sugar
  • 1/2 c. oil
  • 1/2 c. vinegar
  • 1 can tomato soup
  • 1 small onion
  • 1 small bell pepper
  • 1 tsp Worchestershire
  • 1 tsp. salt
  • 1 tsp. mustard, dry
  • 1 tsp pepper

Directions
  1. Slice carrots thin, boil until just tender, drain. Dice onion and bell pepper. Mix other ingredients in a bowl and then add the carrotts, bell pepper, and onions. Let stand several hours. Overnight if possible!
