  • Marinade:
  • 1/2 cup soy sauce
  • 1/2 cup ketchup
  • 3 tablespoons Worchestershire sauce
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon mustard (powdered)
  • 1/4 to 1/2 teaspoons curry powder
  • Few drops sesame oil
  • 1/4 cup rice wine or gin
  • 1/2 teaspoon garlic powder or 2 tablespoons fresh crushed garlic
  • 3 teaspoons fresh chopped ginger, crushed
  • 5 to 6 stalks green onion, chopped
  • 1/2 cup parsley, chopped
  • 1 to 2 yellow onions, chopped
  • Salt and pepper
  • 4 to 5 large ducks or 8 to 9 teal ( small ducks/ducklings )
  • 4 to 5 slices bacon (if cooking whole ducks)

Directions
  1. In a bowl, combine the first 12 ingredients (soy sauce through ginger) and mix well.
  2. Add the chopped green onions, parsley and yellow onions to the liquid and stir to combine.
  3. (This is the marinade.)
  4. For whole duck or teal: Salt and pepper inside and out.
  5. Take a handful of vegetables from the marinade and place in the cavity.
  6. Rub some of the marinade on the outside of the duck.
  7. Repeat with remaining ducks.
  8. Place ducks back in the marinade and refrigerate for 2 to 4 hours.
  9. For duck pieces:
  10. If desired, cut the duck in half or take the breastbone out, leaving two pieces with thighs and legs attached.
  11. Cutting the breast away from the leg and thigh will give you 4 pieces to cook.
  12. Place the duck pieces in the marinade and refrigerate for 2 to 4 hours.
  13. To cook:
  14. Preheat oven to 350 degrees.
  15. Remove ducks from marinade and place in a roasting pan.
  16. For whole ducks, place 1 strip of bacon on each duck.
  17. Cook duck, whole or pieces, until internal temperature reaches 170 degrees with a meat thermometer (not touching bone), up to an hour.
