  • Filling
  • Ingredients:
  • 1 ½ cups fresh or frozen Blueberries, slightly thawed
  • ½ cup Equal or sweetener
  • 1 ½ tsp. Cornstarch
  • 2 to 4 tsp. Cold water
  • Skim milk
  • 1 tbs. Equal or sweetener
  • Reduced-Fat pie crust for 9-inch pie
  • Ingredients:
  • 1 ¼ cups all-purpose flour
  • 2 Tbs Equal or sweetener
  • ¼ tsp. Salt
  • 4 Tbs. cold Margarine, cut into pieces
  • 5 to 6 Tbs. ice water

Directions
  1. Pastry Method make first
  2. Combine flour, Equal and salt in medium bowl; cut in margarine with pastry blender or with fork until mixture resembles coarse crumbs. Mix in water, 1 Tbs. at a time, stirring lightly with fork after each addition until dough is formed. Cover with plastic wrap and refrigerate till ready to use.
  3. Preheat oven 400
  4. Filling Method:
  5. Rinse blueberries; drain slightly and place in medium saucepan. Sprinkle berries with ½ cup Equal or sweetener and cornstarch; toss to coat. Cook over medium heat, stirring constantly, until berries begin to release juice and form small amount of thickened sauce. ( Add water, 1 teaspoon at a time, if bottom of saucepan becomes dry.) Cool; refrigerate until chilled.
  6. Roll pastry on floured surface to 1/8-inch thickness; cut into 8 5-inch squares, re-roll scrapes as necessary. Place scant 2 Tablespoons of blueberry mixture on each pastry square till all mixture is used. Fold squares in half to form triangles and press edges together to seal. Flute edges of pastry or crimp with tines of fork; pierce tops of pastries 3 to 4 times with tip of knife.
  7. Brush tops of pastries lightly with milk and sprinkle with ½ teaspoon of Equal or sweetener. Bake
  8. on foil or parchment-lined cookie sheet in preheated oven at 400 until pastries are browned, about 25 minutes.
  9. Calories per serving; 147, Carbohydrates: 21g, Fat: :6g, Sodium: 134mg
