Greek Potato Salad With Feta Vinaigrette

- 2 pounds red potatoes cut into 1" pieces shopping list
- 2 tablespoons red wine vinegar shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1 tablespoon Dijon mustard shopping list
- 1 tablespoon chopped fresh oregano shopping list
- 2 tablespoons chopped fresh mint shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 4 ounces feta cheese crumbled shopping list
- 1/2 cup halved pitted olives shopping list
- 1 cucumber peeled seeded and diced shopping list
- 1/2 cup chopped roasted red peppers shopping list
- 1 small green bell pepper diced shopping list
- 1/2 cup diced red onion shopping list
- 1/4 cup chopped fresh parsley shopping list
How to make it
- Steam potatoes until very tender about 14 minutes.
- Meanwhile make dressing by whisking vinegar, oil, mustard, salt, pepper and feta.
- While potatoes are still warm toss them with the dressing and set aside until cool.
- Stir in remaining ingredients then serve while warm.
