Swiss Spinach Patties Recipe
SWISS SPINACH PATTIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cashion Estate in Terrell, Texas in 1996.

Ingredients
  • 10 ounces frozen spinach thawed and squeezed
  • 3/4 cup dry cottage cheese
  • 1/2 cup finely crushed pork rinds
  • 1/2 cup grated parmesan cheese
  • 1/4 cup mayonnaise
  • 2 eggs beaten
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1/2 cup shredded Swiss cheese

Directions
  1. In medium bowl combine all ingredients except oil and Swiss cheese then mix well.
  2. Shape mixture into 6 patties.
  3. Heat oil in large skillet over medium heat then cook patties 5 minutes on each side.
  4. Top with cheese then serve immediately.

This looks yummy! will take out pork rinds to veggie it up (probably replace with some portobello instead), but love that there is cottage cheese in there!! Thanks for sharing :)
