Swiss Spinach Patties

- 10 ounces frozen spinach thawed and squeezed shopping list
- 3/4 cup dry cottage cheese shopping list
- 1/2 cup finely crushed pork rinds shopping list
- 1/2 cup grated parmesan cheese shopping list
- 1/4 cup mayonnaise shopping list
- 2 eggs beaten shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 2 tablespoons olive oil shopping list
- 1/2 cup shredded swiss cheese shopping list
How to make it
- In medium bowl combine all ingredients except oil and Swiss cheese then mix well.
- Shape mixture into 6 patties.
- Heat oil in large skillet over medium heat then cook patties 5 minutes on each side.
- Top with cheese then serve immediately.

This looks yummy! will take out pork rinds to veggie it up (probably replace with some portobello instead), but love that there is cottage cheese in there!! Thanks for sharing :)
