Green Apple Jelly Recipe
This is a really tasty jelly, a nice change from other fruit spreads. And it looks positively gorgeous in its little jars! Makes a lovely housewarming gift.

Ingredients
  • 3 lbs green apples (unripened apples of any variety will do but Granny Smiths are best)
  • 2 lb sugar
  • 6 cups water, approx.
  • Juice of 1 lemon

Directions
  1. Rinse apples and cut them into quarters (do not peel them). Place them in a large saucepan or copper pot and cover with water. Bring them to a boil and then simmer for 30 minutes.
  2. Press the apples through a sieve, pressing on them lightly. Strain them again through several layers of damp cheesecloth.
  3. Pour 4 cups of this juice into a saucepan with the lemon juice and sugar. Bring the mixture to a boil. Skim off the froth and continue cooking over high heat for 5 to 10 minutes. Skim again, if necessary.
  4. Pour into sterilized jars and seal.
