Brown Sauce About 1 Cup Recipe

Ingredients

1/2 cup chopped onion

1/2 cup sliced carrot

2 tablespoons butter or margarine

2 teaspoons sugar

4 teaspoons all-purpose flour

1 1/2 cups beef broth

2 tablespoons tomato paste

1/2 teaspoon dried thyme

1 bay leaf

1/8 teaspoon pepper

1/4 teaspoon dried thyme or basil, crushed

Directions

1. In small saucepan cook onion and carrot in butter or margarine over medium heat until tender. Stir in sugar. Cook and stir 5 minutes. Stir in flour. Cook and stir 6 to 8 minutes more or until flour is brown. Stir in beef broth, tomato paste, dried thyme, bay leaf, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until reduced to 1 1/2 cups. Strain. Makes about 1 cup.

Variation:

Mushroom Sauce

1c. Brown sauce

½ c. sliced mushrooms

2 TB butter

1 TB lemon juice

Saute mushrooms in butter, add brown sauce and bring to a boil; remove from heat. Add lemon juice. Serve over roast beef or steak.
