Brown Sauce about 1 cup

- 1/2 cup chopped onion shopping list
- 1/2 cup sliced carrot shopping list
- 2 tablespoons butter or margarine shopping list
- 2 teaspoons sugar shopping list
- 4 teaspoons all-purpose flour shopping list
- 1 1/2 cups beef broth shopping list
- 2 tablespoons tomato paste shopping list
- 1/2 teaspoon dried thyme shopping list
- 1 bay leaf shopping list
- 1/8 teaspoon pepper shopping list
- 1/4 teaspoon dried thyme or basil, crushed shopping list
How to make it
- 1. In small saucepan cook onion and carrot in butter or margarine over medium heat until tender. Stir in sugar. Cook and stir 5 minutes. Stir in flour. Cook and stir 6 to 8 minutes more or until flour is brown. Stir in beef broth, tomato paste, dried thyme, bay leaf, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until reduced to 1 1/2 cups. Strain. Makes about 1 cup.

- Mushroom Sauce
- 1c. Brown sauce
- ½ c. sliced mushrooms
- 2 TB butter
- 1 TB lemon juice
- Saute mushrooms in butter, add brown sauce and bring to a boil; remove from heat. Add lemon juice. Serve over roast beef or steak.
