How to make it

  • 1. In small saucepan cook onion and carrot in butter or margarine over medium heat until tender. Stir in sugar. Cook and stir 5 minutes. Stir in flour. Cook and stir 6 to 8 minutes more or until flour is brown. Stir in beef broth, tomato paste, dried thyme, bay leaf, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until reduced to 1 1/2 cups. Strain. Makes about 1 cup.
  • Variation:
  • Mushroom Sauce
  • 1c. Brown sauce
  • ½ c. sliced mushrooms
  • 2 TB butter
  • 1 TB lemon juice
  • Saute mushrooms in butter, add brown sauce and bring to a boil; remove from heat. Add lemon juice. Serve over roast beef or steak.
