Brown Sauce About 1 Cup Recipe
Here is a basic sauce recipe that I use.

Ingredients
  • 1/2 cup chopped onion
  • 1/2 cup sliced carrot
  • 2 tablespoons butter or margarine
  • 2 teaspoons sugar
  • 4 teaspoons all-purpose flour
  • 1 1/2 cups beef broth
  • 2 tablespoons tomato paste
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 1/8 teaspoon pepper
  • 1/4 teaspoon dried thyme or basil, crushed

Directions
  1. 1. In small saucepan cook onion and carrot in butter or margarine over medium heat until tender. Stir in sugar. Cook and stir 5 minutes. Stir in flour. Cook and stir 6 to 8 minutes more or until flour is brown. Stir in beef broth, tomato paste, dried thyme, bay leaf, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until reduced to 1 1/2 cups. Strain. Makes about 1 cup.

  3. Mushroom Sauce
  4. 1c. Brown sauce
  5. ½ c. sliced mushrooms
  6. 2 TB butter
  7. 1 TB lemon juice
  8. Saute mushrooms in butter, add brown sauce and bring to a boil; remove from heat. Add lemon juice. Serve over roast beef or steak.
