Penne Pasta and Beef casserole

- 8 oz. pkg. penne pasta (or your favorite tube pasta) shopping list
- 1 1/2 lb. ground beef shopping list
- 1 small-medium onion, chopped shopping list
- 1 garlic clove, minced shopping list
- 1 16oz. can diced tomatoes--(the flavored ones with garlic & basil are good) shopping list
- salt & pepper to taste shopping list
- 2 tsp. italian seasoning Blend shopping list
- 1 8oz. can tomato sauce shopping list
- 3-4 cups your favorite cheese, shredded ( Mozzarella, colby Jack, Three cheese Blend) shopping list
How to make it
- In a large pan, brown the beef & then drain.
- Add the onion and cook til tender, about 5 minutes.
- Add the garlic and the tomatoes with the juice and cook about 5 more minutes or until the garlic and tomatoes soften a bit.
- Season with salt and pepper, and the Italian Seasoning.
- Add the tomato sauce and stir.
- Cover the pan and let the sauce simmer gently for about 10 minutes.
- While the meat browns in Step #1, cook the pasta according to package directions. Do not overcook pasta, as it will continue cooking in the oven.
- Lightly oil a 9" x 13" pan. Spoon in a LIGHT layer of meat sauce.
- Begin layering with 1/2 of the pasta, 1/2 the meat sauce and 1/2 the cheese.
- Finish with the rest of the pasta, the rest the meat sauce and the rest of the cheese.
- I sometimes vary the thickness of the layers and make 3 layers instead of just two.
- You can add more cheese if you like it "gooeyer". Cover the pan with foil and bake 20-25 minutes @ 375. Let the casserole set for about 5 minutes before serving.
