This may sound strange, but you don't even taste the pumpkin! It adds a lot of moisture and cuts down on the calories. It's simple too, just mix and bake.

This is a great recipe - I use a spice cake mix and leave out the water to make cookies (sprinkle a few mini chocolate chips on the top and it fixes the chocolate craving too!). Highly recommended!
