a twist on norwegian open face sandwich

Ingredients
  • 6-12 slices whitebread toasted
  • freshly made garlic maynaise
  • 1/2 bunch fresh dill
  • bag of rocket salad
  • 1-2 fresh red peppers
  • 1 lemon
  • 1 bpound crayfish or freshly cooked medium size prawns
  • fresh ground white pepper

Directions
  1. cut each slice in half
  2. mix fresh mayo or a jar of good quality garlic mayo with dill
  3. slice pepppers in thin rings
  4. spread a layer of mayo mix on toast ,put some rocket leaves
  5. top it with generous amount of crayfish or shrimps.
  6. squirt little amount of lemon on top and garnish with red pepper
  7. rings.....
  8. repeat this process for the rest of the bread. place on a serving platter,,,,
  9. serve this meal with sliced gherkins, and light white wine
