Freezer Haul Quickbread

- 1 over-ripe banana, mashed shopping list
- 1 1/2 cups pitted cherries shopping list
- 1 large peach, pitted and roughly chopped shopping list
- 2 small plums, pitted and roughly chopped shopping list
- 1/3 cup cranberry juice shopping list
- 1 tbsp vanilla shopping list
- 1 tbsp honey shopping list
- 1 cup flour shopping list
- 1 cup whole wheat flour shopping list
- 1 cup barley flour shopping list
- 1 cup rolled oats (not instant) shopping list
- 2 tbsp ground flaxseed shopping list
- 1 tbsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/4 tsp nutmeg shopping list
- 1/4 tsp salt shopping list
- 1/2 cup butter, room temperature shopping list
- 1 cup sugar shopping list
How to make it
- Preheat oven to 325F, grease a 9x5" loaf pan.
- In a bowl, combine fruit, cranberry juice, vanilla and honey. Set aside.
- In another bowl whisk together flours, oats, flaxseed, baking powder, baking soda, nutmeg and salt. Set aside.
- In a large bowl, cream together butter and sugar until fluffy.
- Beginning and ending with the dry ingredients, alternate additions of the flour and fruit mixtures to the butter, blending well after each addition.
- Spread in the pan and place on the lowest rack of the oven.
- Bake for 1 hour 40 minutes, or until tests done.
- Cool in the pan for 10 minutes, then turn out onto a rack and cool completely.
