Mustard-Basil Vinaigrette Recipe
This is another recipe from my catering days. It is a favorite of mine.

Ingredients
  • 1/3 cup sweet-hot mustard
  • 2 egg yolks
  • 1 Tbsp. fresh lemon juice, strained
  • 1 Tbsp. garlic puree
  • 2 Tbsp. mayonnaise
  • 3 1/2 oz. apple cider vinegar
  • 1 1/2 tsp. dried herbs de Provence
  • 1 1/2 tsp. parsley, finely minced
  • 3 oz. red wine vinegar
  • 1/4 tsp. salt, or to taste
  • 1/4 tsp. fresh ground white pepper, or to taste

Directions
  1. In a blender or food processor, combine mustard, egg yolks, lemon juice, garlic, mayonnaise, vinegars, herbs and parsley; process briefly.
  2. With machine running, add oil in a thin but steady stream; process until thickened.
  3. Use as a dressing for a green salad or a dip for vegetables.
