Ingredients
  • 1 lb fresh scallops
  • 2 tablespoon virgin olive oil
  • 5 cloves garlic
  • 2 red onions
  • fresh herbes de provence or 4 sprigs of fresh thyme
  • 3 tablespoons fresh chopped flatleaf parsely
  • 2 ripe tomatoes
  • 1/8 teaspoon cayenne pepper
  • pinch of salt
  • fresh cracked black pepper
  • 1/3 cup white wine such as muscadet

Directions
  1. heat oil in a frying pan on medium heat. add crushed garlic, stir
  2. in chopped garlic and over medium heat for about 10 minutes
  3. stirring occasionally. add disced tomatoes,stir, add scallops,wine
  4. cayenne and black pepper and herbs . cook for about 15 minutes till wine sauce is reduced to quarter,
  5. scoop in serving dishes and sprinke with chopped parsley
