Arkansas Golden Silver Dollars

These tasty little golden, silver dollars are really corn meal muffins, pancake style! The whole wheat flour and wheat bran only make this favorite even more tasty. A fast and easy way to have corn bread in about 10 minutes.
Ingredients
- 1/2 cup yellow corn meal shopping list
- 1/4 cup whole wheat flour shopping list
- 1/4 cup wheat bran shopping list
- 1 tablespoon sugar shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 large egg shopping list
- 1/2 cup buttermilk OR soured milk (to sour milk, add about 1 tablespoon of vinegar or lemon juice to regular milk and stir until it is lumpy) shopping list
- oil and skillet for frying shopping list
How to make it
- Mix all of the ingredients together in a small bowl, batter will be thick
- Drop by tablespoonfuls into oil at medium heat on stovetop
- Fry until puffy and golden brown, turning only once...Scrumptious!
- Serve hot
