How to make it

  • Measure flour, sugar, baking powder, and salt into large bowl. Stir. Make a well in center.
  • In small bowl, beat egg until frothy. Mix in cooking oil, milk, and pineapple. Pour into well. Stir just enough to moisten. Batter will be lumpy. Fill greased muffin cups 2/3 full, or muffin paper liners. Bake in 400 degrees F oven for 20 to 25 minutes. Wait 5 minutes for easier removal of muffins. Serve warm.
