Tomato and Cucumber Salad

This is one of my favorite salads during my catering days. Very refreshing.
Ingredients
- Dressing: shopping list
- 2 tsp. red wine vinegar shopping list
- 1/2 tsp. sugar shopping list
- 2 Tbsp. olive oil shopping list
- 1/8 tsp. kosher salt, or to taste shopping list
- 1/4 tsp. freshly ground white pepper, or to taste shopping list

- Salad: shopping list
- 3 cups cherry tomatoes, quartered shopping list
- 3 cups cucumber, peeled, seeded and sliced shopping list
- 1 cup sweet red onion, cut in half, thinly sliced shopping list
- 1 cup feta cheese, crumbled shopping list
How to make it
- In a large bowl, whisk together the vinegar, sugar and oil; mix well. Season to taste with salt and pepper
- Add the tomatoes, cucumber, onion and feta cheese; toss to mix well.
- Serve chilled.
