This is one of my favorite salads during my catering days. Very refreshing.

Ingredients
  • Dressing:
  • 2 tsp. red wine vinegar
  • 1/2 tsp. sugar
  • 2 Tbsp. olive oil
  • 1/8 tsp. kosher salt, or to taste
  • 1/4 tsp. freshly ground white pepper, or to taste
  • ---------------------------
  • Salad:
  • 3 cups cherry tomatoes, quartered
  • 3 cups cucumber, peeled, seeded and sliced
  • 1 cup sweet red onion, cut in half, thinly sliced
  • 1 cup feta cheese, crumbled

Directions
  1. In a large bowl, whisk together the vinegar, sugar and oil; mix well. Season to taste with salt and pepper
  2. Add the tomatoes, cucumber, onion and feta cheese; toss to mix well.
  3. Serve chilled.
