I found this one while reading my email. I thought it would make a good summer time porch food. So I am putting it here so I can find it next summer.

Ingredients
  • 1/2 head iceberg lettuce, sliced into 1/2 inch strips
  • 1/2 head romaine lettuce, sliced into 1/2 inch strips
  • 4 thinly sliced green onions
  • 1 European cucumber, sliced
  • 2 pounds ripe tomatoes, quartered
  • 1 can corn kernels, drained
  • 2 cups shredded Monterey jack cheese
  • 1/4 cup Barbecue Sauce
  • Ranch dressing, to taste
  • 1 pound pulled pork

Directions
  1. Arrange the lettuce, green onions, cucumber, tomatoes, and corn in a large bowl.
  2. Sprinkle the jack cheese over the top.
  3. Pour on the barbecue sauce and ranch dressing.
  4. Top with pulled pork and toss before serving.

I'd eat it...even in the house, if necessary! This sounds really refreshing. Sometimes when we have pulled pork, it seems so heavy; this would lighten it up to a better standard, healthwise (and quite possibly EVEN taste-wise.) Thanks for posting.[Somehow this review was accidentally posted on a new member's comments section...so I hope that doesn't scare them to pieces! So random.]
