Stuffed French Toast

- 2 eggs, slightly beaten shopping list
- 1/4 cup milk shopping list
- 1 teaspoon vanilla shopping list
- 8 slices of good French bread, sliced approximately 1-inch each shopping list
- FILLING: shopping list
- 1 eight-ounce package cream cheese, softened shopping list
- 1 tablespoon granulated sugar shopping list
- 1 teaspoon grated orange peel shopping list
- 1/4 teaspoon cinnamon shopping list
- BLUEBERRY SYRUP: shopping list
- 1/2 cup water shopping list
- 1/4 cup maple syrup shopping list
- 2 tablespoons granulated sugar shopping list
- 1 tablespoon cornstarch shopping list
- 1 1/2 cups frozen blueberries shopping list
How to make it
- In a shallow bowl, beat filling ingredients until smooth.
- Set aside.
- In another medium mixing bowl, combine eggs, milk, and vanilla.
- Cut a "pocket" into the side of each slice of French bread.
- With spoon, stuff 1-2 tablespoons of filling into bread pockets.
- Spray griddle with nonstick cooking spray.
- Preheat griddle to medium-high heat.
- Dip each slice of bread into egg mixture.
- Fry for approximately 2-3 minutes on each side, or until golden-brown.
- Serve with butter and blueberry syrup, if desired.
- BLUEBERRY SYRUP:
- In saucepan, mix water, maple syrup, sugar, and cornstarch.
- Bring to boil and continue boiling for 2 minutes, or until thickened.
- Reduce heat to low.
- Add blueberries and stir until combined.
- Simmer for 5-7 minutes.
- Stir lightly again before serving with french toast.
- Enjoy!
