Heavy hatch chili based pasta sauce. Whole wheat pasta tastes better with this hearty, earthy sauce. Very green, fresh vegetabley, sort of sauce.

Ingredients
  • 1 hatch chili pepper, julienned
  • 3 scallions, chopped
  • 1 beef bullion cube dissolved in 1/2 cup hot water
  • 1 cup canned chopped stewed tomatoes (with as little juice as possible)
  • black pepper
  • Cooked whole wheat pasta of your choice

Directions
  1. Heat the hatch peppers on high heat in a dry, ungreased saute pan for a few minutes
  2. Add scallions and keep turning until char marks begin on peppers and onions
  3. Add broth and tomatoes and cook until all is hot but no more
  4. Divide pasta on plates and immediately top with sauce
