Chicken And Dumplings

- 1 KG chicken pieces or 1 chicken, cut up into legs, thighs wings and breasts, skinned and de-fatted shopping list
- 2 cups water shopping list
- 1 tsp salt shopping list
- 1 carrot, diced shopping list
- 1 onion, diced, shopping list
- 1 branch celery, diced shopping list
- 1 tsp of any fresh herb shopping list
- ½ cup milk shopping list
- ¼ cup flour shopping list
- Dumplings shopping list
- ½ cup milk shopping list
- 1 cup flour shopping list
- 1 ½ tsp baking powder shopping list
- ½ tsp salt shopping list
- 1/8 cup shortening shopping list
How to make it
- 1. Bring Chicken, salt, veggies and herbs to a boil and simmer 1 hour or until chicken is fully cooked.
- 2. Strain broth and reserve chicken, discard veggies
- 3. Mix milk and flour together until smooth.
- 4. Whisk into boiling broth and simmer to thicken.
- 5. Return chicken to pot and return to simmer.
- Dumplings
- 1. Mix dry ingredients together.
- 2. Cut shortening into dry goods until well mixed.
- 3. Add milk and mix just until moistened.
- 4. Drop spoonfuls into slowly simmering stew.
- 5. Cook uncovered 10 minutes then covered 10 minutes.
