In a hurry and need to use up some of those last remnants from the crisper or that extra piece of chicken that was left feeling dejected after last night's supper? Pita to the rescue! (And a great lunch, to boot.)

Ingredients
  • olive oil for stir frying (about 2 tablespoons...less, if you use cooking spray)
  • 1/2 cup sliced celery
  • 1/2 cup slice halved carrot coins
  • 1/2 cup chopped red onion (yellow will do)
  • 2 cups sliced cabbage (or shreded)
  • Salt & Pepper to taste
  • Garlic powder to taste
  • 1 cup cooked cubed or chopped chicken
  • 1/4 cup prepared thousand island dressing
  • freshly ground black pepper (optional)
  • 2 six inch pitas
  • two thick slices tomato cut into 12 pieces (for garnish)

Directions
  1. Salte the celery, carrots, and red onion over medium heat stirring constantly for about 5 minutes.
  2. Add cabbage, chicken, and spices, cooking until cabbage begins to wilt and chicken is heated.
  3. Remove all to bowl and stir in the thousand island dressing
  4. Optionally top with freshly ground black pepper
  5. Spoon into four pita halves
  6. Garnish with tomato segments
  7. Serve warm.
