Zucchini Lasagna

- 4 to 5 zucchini, depending on size shopping list
- 2 cups prepared tomato sauce shopping list
- 1 onion, diced shopping list
- 3/4 cup diced green peppers shopping list
- 1/4 cup finely diced celery shopping list
- 1 tsp oregano shopping list
- 1/4 to 1/2 lb ground beef (optional) shopping list
- 8 oz mozzarella cheese shopping list
- parmesan cheese, to taste shopping list
- 2 lbs ricotta shopping list
How to make it
- Slice zucchini lengthwise, about 1/4 inch thick, and steam until al dente. Set aside.
- Saute onion, peppers, celery and ground beef .
- Add tomato sauce and oregano and simmer for 5 minutes.
- Layer 13x9 pan , that has been sprayed with cooking spray, with sliced zucchini.
- Top zucchini with half of the ricotta cheese and then a layer of sauce.
- Top sauce with half of the mozzarella cheese and more sauce.
- Repeat layers ending with sauce and finally topping with Parmesan cheese.
- Bake at 350 degrees for 40 minutes.
