Yummy Healthy Apple Oat Bars Recipe
A yummy slice to snack on between meals, and its all healthy, no fat, only sweetened from the honey, and full of oats to keep you going 'til tea time.

Ingredients
  • 2 cups wholemeal SR flour
  • 1 tsp bi-carb soda
  • 2 tsp allspice
  • 1 tsp cinnamon
  • 1 cup rolled oats
  • 1/3 cup sultanas
  • 2 apples, grated
  • 1 egg
  • ½ cup yoghurt
  • ¼ cup yoghurt juice*
  • 1/3 cup honey

Directions
  1. - Preheat oven to 150°C (300F)
  2. - In a large bowl, mix together flour, soda, spices, oats, sultanas and apple.
  3. - In a separate bowl, whisk together the remaining ingredients.
  4. - Add wet mixture to dry mixture and, using a metal spoon, fold to gently combine. Don’t overmix.
  5. - Spoon into a lined 16 x 28 cm pan and bake for 40-50 minutes, until a skewer comes out clean.
  6. - Cool completely before slicing.

  8. * yoghurt juice is the watery liquid that collects on the surface of natural-set yoghurt. I make my own yoghurt, so i always pour-off the juice (whey) and save it for baking. Its great in place of buttermilk.
  9. If you dont have yoghurt juice, you can sub apple juice OR ommit it and the yoghurt and use 3/4 cup of buttermilk instead.
