Pasta With Sausage Casserole Recipe

Ingredients
  • 1-3/4 cups uncooked rotini, shells or penne pasta (5 oz)
  • 1 lb. bulk Italian sausage - I like to add more
  • *You can use pork or turkey bulk sausage or you can use ground beef
  • 1 large onion, coarsely chopped
  • 2 celery ribs, coarsely chopped
  • 1/2 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1 cup V8 or a similar tomato juice
  • 1 can (16 oz) chili beans in sauce, undrained
  • 1 can (14.5 oz) zesty chili-style diced tomatoes, undrained

Directions
  1. Heat oven to 350 degrees F.
  2. Cook and drain pasta as directed on package.
  3. Return to pot and set aside.
  4. Meanwhile, in a 10 inch skillet, saute sausage, onion and celery over medium heat for 12-15 minutes, stirring occasionally, until sausage is no longer pink.
  5. Drain fat.
  6. Remove from heat and stir in oregano, garlic and cayenne pepper.
  7. Blend sausage mixture into pasta.
  8. Stir in remaining ingredients.
  9. *If you want to, you can sprinkle your favorite grated cheese on top or blend it into the ingredients.
  10. Spoon into an ungreased 2 quart casserole and cover with a lid or foil.
  11. Bake for 60 minutes or until hot and bubbly. If you have added the cheese on top, then remove the foil about 15 minutes before the cooking time is up, to lightly brown the cheese.
