Braised Beef Short Ribs With Chocolate Recipe
BRAISED BEEF SHORT RIBS WITH CHOCOLATE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pryor Estate in Grapevine, Texas in 1996.

Ingredients
  • 8 beef short ribs each with 2 bones
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 10 cloves garlic minced and divided
  • 3 stalks celery chopped
  • 1 small white onion chopped
  • 1 large carrot chopped
  • 1 bottle dry red wine
  • 1 cup chicken broth
  • 2 bay leaves
  • 1/4 cup fresh thyme leaves
  • 1 cup chopped bittersweet chocolate
  • 1/2 cup chopped parsley
  • Zest and juice of 1 small lemon

Directions
  1. Preheat oven to 300 then season ribs with salt and pepper.
  2. Heat oil in a large pan over medium high heat then cook ribs in batches 3 minutes per side.
  3. Set ribs aside then discard all but 1 tablespoon fat from pan.
  4. Reserve 1 tablespoon garlic then add remaining garlic, celery, onion and carrot to pan.
  5. Cook stirring often until often is soft about 10 minutes.
  6. Stir in wine and broth scraping up brown bits on the bottom of the pan then heat to a boil.
  7. Return ribs to pan then add bay leaves and thyme then distribute chocolate over the liquid.
  8. Cover pan tightly with foil then top with lid and transfer to oven then cook meat 3 hours.
  9. Remove ribs to a platter and cover with foil to keep warm.
  10. Pour remaining pan mixture through strainer into bowl pressing out as much liquid as possible.
  11. Skim off fat then return mixture to pan and cook over high heat for 15 minutes.
  12. Reduce heat to medium then return ribs to sauce and cook until heated through about 5 minutes.
  13. Meanwhile stir together parsley, lemon zest, lemon juice and reserved garlic.
  14. Transfer ribs and sauce to platter and spoon parsley mixture over ribs.
