How to make it

  • Preheat oven to 300 then season ribs with salt and pepper.
  • Heat oil in a large pan over medium high heat then cook ribs in batches 3 minutes per side.
  • Set ribs aside then discard all but 1 tablespoon fat from pan.
  • Reserve 1 tablespoon garlic then add remaining garlic, celery, onion and carrot to pan.
  • Cook stirring often until often is soft about 10 minutes.
  • Stir in wine and broth scraping up brown bits on the bottom of the pan then heat to a boil.
  • Return ribs to pan then add bay leaves and thyme then distribute chocolate over the liquid.
  • Cover pan tightly with foil then top with lid and transfer to oven then cook meat 3 hours.
  • Remove ribs to a platter and cover with foil to keep warm.
  • Pour remaining pan mixture through strainer into bowl pressing out as much liquid as possible.
  • Skim off fat then return mixture to pan and cook over high heat for 15 minutes.
  • Reduce heat to medium then return ribs to sauce and cook until heated through about 5 minutes.
  • Meanwhile stir together parsley, lemon zest, lemon juice and reserved garlic.
  • Transfer ribs and sauce to platter and spoon parsley mixture over ribs.
