Countryside Pork Chops

- 1/4 cup olive oil shopping list
- 2 yellow squash, cut into 1-inch chunks shopping list
- 1 zucchini, cut into 1-inch chunks shopping list
- 1 medium onion, cut into 1/4-inch slices shopping list
- 4 pork loin chops (about 1-1/2 pounds total), cut 1-inch thick shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon black pepper shopping list
- 1/2 pound fresh mushrooms, quartered shopping list
- 1 jar (26 ounces) spaghetti sauce shopping list
- 1 teaspoon dried oregano shopping list
How to make it
- In a large skillet, heat the oil over medium-high heat. Add the yellow squash, zucchini, and onion; sauté for 4 to 5 minutes, or until tender. Transfer to a bowl and set aside.
- Season the pork chops with salt and pepper, and brown for 2 minutes per side.
- Return the sautéed vegetables to the skillet. Reduce the heat to low, add the mushrooms, spaghetti sauce, and oregano, and cook for 15 to 20 minutes, or until the pork chops are cooked through
