How to make it

  • In a large skillet, heat the oil over medium-high heat. Add the yellow squash, zucchini, and onion; sauté for 4 to 5 minutes, or until tender. Transfer to a bowl and set aside.
  • Season the pork chops with salt and pepper, and brown for 2 minutes per side.
  • Return the sautéed vegetables to the skillet. Reduce the heat to low, add the mushrooms, spaghetti sauce, and oregano, and cook for 15 to 20 minutes, or until the pork chops are cooked through
