Ingredients
  • 1 lemon
  • 3 pounds apples, peeled and sliced
  • 2/3 cup water
  • 1 1/4 cup brown sugar
  • 3 Tbs cornstarch
  • 1/2 cup chopped dried apricots
  • 1/4 cup dried cranberries
  • 1 small jalepeno pepper, seeded, finely chopped
  • 1 tsp pumpkin pie spice
  • 1 tsp salt
  • 2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 1 Tbs baking powder
  • 1/2 cup butter
  • 1 1/4 cup buttermilk

Directions
  1. Shred 1 tsp lemon zest from lemon
  2. squeeze 2 tsp juice from lemon and combine with apples
  3. In dutch oven stir brown sugar and cornstarch.
  4. Stir in 2/3 cup water, dried fruits, jalepeno, and pie spice
  5. Cook and stir over medium heat till boiling
  6. Cook and stir 1 more minute
  7. Remove from heat and stir in apples
  8. spoon mixture into 3 qt casserole dish
  9. Combine flour sugar, 1 tsp salt and lemon peel
  10. Cut in butter till small pieces
  11. Stir in buttermilk just to combine
  12. Drop mixture in 12 mounds over fruit
  13. Bake in preheated 400F oven about 25 to 30 minutes or top is golden and filling bubbly
  14. Cool 30 mins
  15. serve warm with vanilla yoghurt
