How to make it

  • Shred 1 tsp lemon zest from lemon
  • squeeze 2 tsp juice from lemon and combine with apples
  • In dutch oven stir brown sugar and cornstarch.
  • Stir in 2/3 cup water, dried fruits, jalepeno, and pie spice
  • Cook and stir over medium heat till boiling
  • Cook and stir 1 more minute
  • Remove from heat and stir in apples
  • spoon mixture into 3 qt casserole dish
  • Combine flour sugar, 1 tsp salt and lemon peel
  • Cut in butter till small pieces
  • Stir in buttermilk just to combine
  • Drop mixture in 12 mounds over fruit
  • Bake in preheated 400F oven about 25 to 30 minutes or top is golden and filling bubbly
  • Cool 30 mins
  • serve warm with vanilla yoghurt
