How to make it

  • Slice eggplant into 1/2 inch slices
  • Dry eggplant on paper towels
  • Mix two eggs and milk in a bowl
  • Place the breadcrumbs on a dish.
  • Heat oil in fry-pan.
  • Mix together the ricotta cheese and eggs.
  • Place about 2 tbls. chhese mixture in the middle of one eggplant slice
  • Top with another eggplant slice like a SANDWICH.
  • Dip the eggplant sandwich in the egg & milk mixture.
  • Now dip into the breadcrumbs.
  • Place each in hot oil and fry on each side till golden brown.
  • Drain well on paper towels.
  • (you can eat these now as hot sandwiches) OR:
  • Cover all the cakes with pasta sauce in a cassorole dish.
  • Sprinkle with fresh parmesan cheese.
  • Sprinkle lightly with garlic salt.
  • Bake at 350 degrees,35 minutes.
  • Can also cover with mozzerella and bake till melted if desired.
