Eggplant Cakes

- 1 large eggplant shopping list
- seasoned breadcrumbs shopping list
- 16 oz. ricotta cheese shopping list
- oil for frying shopping list
- 4 eggs shopping list
- parmesan cheese shopping list
- garlic salt to taste shopping list
- 1 cup of milk shopping list
- 1 32 oz. jar of any pasta sauce shopping list
How to make it
- Slice eggplant into 1/2 inch slices
- Dry eggplant on paper towels
- Mix two eggs and milk in a bowl
- Place the breadcrumbs on a dish.
- Heat oil in fry-pan.
- Mix together the ricotta cheese and eggs.
- Place about 2 tbls. chhese mixture in the middle of one eggplant slice
- Top with another eggplant slice like a SANDWICH.
- Dip the eggplant sandwich in the egg & milk mixture.
- Now dip into the breadcrumbs.
- Place each in hot oil and fry on each side till golden brown.
- Drain well on paper towels.
- (you can eat these now as hot sandwiches) OR:
- Cover all the cakes with pasta sauce in a cassorole dish.
- Sprinkle with fresh parmesan cheese.
- Sprinkle lightly with garlic salt.
- Bake at 350 degrees,35 minutes.
- Can also cover with mozzerella and bake till melted if desired.
