How to make it

  • Put all ingredients in a large stock pot
  • Cover and bring to a boil
  • Simmer, partially covered for 2 hours
  • Strain into a large container
  • Refridgerate for several hours or overnight
  • Remove from fridge and strain again to remove top layer of fat
  • Return to pot and simmer until reduced by half
  • Use in your favourite soup recipes for a nice smokey flavour, can be frozen, makes enough for 3 good sized pots of soup.
