Smokey corn chowder

- 1 tsbp olive oil shopping list
- 1 tbsp butter shopping list
- 1 onion finely chopped shopping list
- 1 carrot finely chopped shopping list
- 1 stalk celery finely chopped shopping list
- 2 cloves garlic finely chopped shopping list
- 1/2 cup red pepper finely chopped shopping list
- 1/2 cup green pepper finely chopped shopping list
- 4 cups ham bone stock shopping list
- 2 1/2 cups corn kernels shopping list
- 1 cup cubed ham shopping list
- 1 cup cooked rice shopping list
How to make it
- Heat oil and butter in the bottom of a heavy bottomed saucepan
- Add onion, carrot, celery, garlic, red pepper, and green pepper
- Cover and let cook over low heat for 5-10 minutes until veggies start to soften
- Add 2 cups ham stock and bring to a boil over medium high heat
- Reduce heat to medium, cover and simmer for 20 minutes
- Puree 2 cups corn and 2 cups ham stock in your blender and add to soup
- Add remaining 1/2 cup corn, cubed ham, return to a simmer for 20 minutes.
- Add cooked rice and heat until good and hot.
- Enjoy!
