Ingredients

How to make it

  • Heat oil and butter in the bottom of a heavy bottomed saucepan
  • Add onion, carrot, celery, garlic, red pepper, and green pepper
  • Cover and let cook over low heat for 5-10 minutes until veggies start to soften
  • Add 2 cups ham stock and bring to a boil over medium high heat
  • Reduce heat to medium, cover and simmer for 20 minutes
  • Puree 2 cups corn and 2 cups ham stock in your blender and add to soup
  • Add remaining 1/2 cup corn, cubed ham, return to a simmer for 20 minutes.
  • Add cooked rice and heat until good and hot.
  • Enjoy!
